G-Sync Not Working After Genshin Update
After the 2.7 update, G-Sync stopped working for Genshin (both fullscreen and window mode). I tried to launch the game with an older version of the FPS unlock, and it didn't work either, so I doubt it's something caused by the new FPS unlocker. Is there anything changed on Mihoyo's side that caused this? Are there any work around at this moment?
Im not really sure but is "Variable Refresh Rate" enabled on your machine? I disabled it on mine and it resulted to Genshin ignoring the fps unlocker at all. As soon as I enabled it, everything worked as expected.
Freesync Premium here with Samsung LC24RG50. Works pretty well, although I personally feel tempted to disable it and use Fast Vsync because of the ghosting artifacts. I admit it's a mistake I made and should've taken the time to look for a VESA compliant monitor instead, but I don't really mind too much.

That has nothing to do with genshin. This is only for UWP (old windows store) apps.
Optimizations for windowed games on win 11 however could bring you G-sync for otherwise unsupported situations.
I use Alt+Enter two times, after that G-sync is activated. And don't forgot set exclusive windows mode.

Mind to share what you mean with "exclusive window mode"? I only know what "exclusive fullscreen" is.
Personally im using Special K. Injected as dxgi.dll with the unlocker. It forces the flip presentation model, not unlike win 11 "Optimizations for windowed games". This makes g-sync work if the games borderless fullscreen (wich is the default in genshin) covers the whole screen, or if your system has working MPOs (MultiPlane Overlays) even for windowed mode. SK works for many games in win 8.1 and up.

I used a name close to the settings in the program:
