Can I just uninstall everything except the "Unsafe" ones?

What major functionality could I lose? I noticed doing the recommended ones already had me lose Bixby, which isn't a big deal. Will any major things not work like camera, microphone, calls/texts, etc.?

Depends on the function of a given package. Check the in-app description of the package in question. Cross-reference apk names on a search engine to be cautious. Read: UAD_FAQ_RECOMMENDATIONS

Theoretically yes but you should be really careful. Don't uninstall everything without checking the description of the packages.

As stated in the FAQ, the Expert list breaks widespread and/or important functionality. For example it will probably remove the stock launcher. You'll have trouble if you didn't download a 3rd-party launcher. Expect to experience breakage of useful features (depending of you usage). Sometimes, a package can be removed without too much side effects on Android N but become necessary on Android N+1.

Camera, microphone and calls/texts should keep working (normally). Actually if you are really motivated, you can try your idea by progressively removing everything and improve the packages description whenever you encounter a non-documented "problem"

Ah, ok. I use NOVA Launcher anyway, so the launcher breaking wouldn't be an issue for me at least. Just most worried about camera/texts&calls/microphone, and core things like that. Thanks for the reply, will experiment! Just been weary to apply anything higher than the Recommended list because it's my daily phone.

Is it normal for certain uninstalled packages to auto-reinstall? I am on Samsung S20 and when I uninstall android.spayfw and games.gos, it auto-reinstalls them (and actually, the spayfw one won't uninstall no matter what).
