I wonder what's the best way to manage it though. There are so many events, that it can be hard to keep track of them all. Should be easy to manage/maintain (also for non-devs)

Managing it is easy as the hosts of the hackathons want exposure. How do I go about it? A pull request?

As an event host, not I know it's not always easy to know about all website/lists you can submit to, unfortunately. So markdown files with Github PRs like the rest of the content, is probably not ideal for event hosts.

Maybe just integrate with an existing Google Sheet doc like

I think a combination of any already existing, public events tracker (as shared above) + Markdown/json files would be ideal. No Airtable. The data should be public and not require any API/integrations.
