Adds the required wolfSSL defines to tools/cross_compile.sh, Tweaks a few of the CMake options to play nice with the cross compile tool.

@jpbland1 this looks a lot like my code still in development at https://github.com/gojimmypi/osp/tree/dev with a preview PR at https://github.com/gojimmypi/osp/tree/pr-realm-vs2022 (see PR Preview text).

How was this tested? I'm still making changes to get everything working.
