The coastline rendering does not seem to be specific to the knooppuntnet tile generation (which uses a fairly outdated version of the OpenMapTiles software).

The rendering looks the same in the OpenMapTiles example map.

It looks like the coastline is extracted from the same OSM data as used to draw the island itself (way tagged "natural=coastline", "place=island" and "name=Île-Grande"). Have to further investigate where the line simplification takes place. Not sure if there is anything that can be done about this.
