Add Waveshare RP2040-TOUCH-LCD-1.28 support (tested on 9.2.2)

I likely need to do the same change in every demo file, I will try all of your demo anyway.

I am lazy for the moment and in a browser, I'll need git to properly make all the change in all the demo file in one PR.

Also this code repetition make each demo a one file thing, but having a way to put that into a single file would be great.
