I am curious if you could possibly make some documentation about configuring our own azure instance to be used, rather than the default.

Basically what do we need to setup to manage our own instance? I would really appreciate anything you could give.

the only thing you need is a app registration in your tenant. You can find information how to set it up here https://github.com/toblum/ESPTeamsPresence/issues/30#issuecomment-1475274011

There are no other Azure resources involved.
