Allow to convertEmptyValues

Is your feature request related to a problem? Please describe. Updating DybamoDB values with empty string fail.

Describe the solution you'd like Dynamo Document Client enables to set convertEmptyValues.
I'd love to have the ability to do that

We never had the need for this feature and right now there are other issues we'd like to address first. But of course we're open for PRs :)

--> for a specific property I guess it would be possible with a custom mapper

But since the issue isn't resolved, it'd be great if you could leave the issue open so that me or someone else may find it, track it, open a PR, and resolve it.
