Debug failing Datadog installation

The version of the Datadog agent has been locked to 7.56.2 in #620, since the installation of 7.57.x failed with an error from dpkg. We need to investigate why more recent versions fail to install cleanly and fix their installation. Afterwards, we should either remove the datadog_agent_version again to unlock the version or set up Renovate to create a PR whenever a new version gets released.
