add socket log appender, add trace.id and span.id for ECS log format

@SlyngDK Any chance you could review and merge this. You might want to update the version to 3.2.0 I guess ... After that I'll have another PR to convert the configuration to use @ConfigMapping instead of ConfigItems

It was not the maintainer that did the release though. If I'm not mistaken it's @gsmet that released it.
