Docs: reorg and split out sections

All of the documentation is currently on one long page. It's hard to read/find what you're looking for. We can do some reorganization to make this content more digestible/discoverable, and probably do some general cleanup throughout as well

Spoke with Aron about this, and we decided it makes sense to coordinate breaking out these sections with converting to these docs to Quarto. On my to-do list but probably waiting for some other things to land first.
