Longhorn finally has SPDK in preview, and will soon have ARM and backup/restore. Should have similar perf to mayastor with improved support and features

Migrated to v1 but SPDK likely won't have Talos support until Q4

Need to move ephemeral off eMMC to avoid flash degredation, but upcoming SPDK uses block disks and might not support partitioning...
