Collect metrics summary after e2e testing

Upon completion of e2e test run, collect and output a summary of our metrics results.

Please see here for documented steps on how to get started with prometheus scraping for OLMv1. This should be set up before the e2e tests run, so that once they finish the metrics should be available for query via PromQL from prometheus.
