ZITI_EDGE_CONTROLLER_API Referenced but is always blank

This is technically an issue on both ziti and ziti-doc.

This value ZITI_EDGE_CONTROLLER_API is never set but the doc references it during the "No Docker" install. Either this variable name needs to be updated with one that is actually set, or the value should be being set during ziti quickstart.
