add clarity around ZAC when using docker

The newer deployment models for ZAC mean some of the doc needs a bit more finesse at times. Specifically https://openziti.io/docs/learn/quickstarts/zac/

There should be some better way to guide the user as to the proper experience to follow, right now it's not as clear as it could be. Maybe a tab grouping would help, maybe just words in the preamble telling them there are more than one section.
