Add Grafana & Prometheus monitoring infrastructure

we can add infrastructure monitoring to Onlook with Prometheus metrics collection and Grafana dashboards for self-hosted deployments. it can provide real-time system health monitoring (CPU, memory, API performance), AI workload tracking (LLM latency, token usage), and proactive alerting.

Benefits: Better self-hosting experience, faster issue resolution, resource optimization, and enterprise-ready monitoring at zero cost using open-source tools.
