chore(node): provide nvmrc to simplify node switching

Provide a .nvmrc file to let automatically switching the correct Node version or install it if needed.

Working on multiple projects could lead to the need of different NodeJS version and knowing what to use could easily become a hustle.

Not sure if this is the correct version - this is what PNPM worked for me. Happy to change it if needed

Noodle is going to be targetted as a project that would influence the change of technologies and tools, one of these tools is nvm as that we chose to go with Volta instead, hence why the absence of a .nvmrc file.
