I've added operation types from MongoDB change events

@ksshlee thanks for the PR. I'm no longer working on the connector, but I've added KAFKA-425 to track this for the connector team.

It should be triaged in the near future.

Hey @ksshlee thank you for the PR, I'm currently prepping the 1.15.0 release and I think it makes sense to include this change. I went ahead and added a few tests.
