docs: add Chinese README translations and improve main README formatting

  • Add links to Traditional and Simplified Chinese README translations at the top of the main README
  • Add new README files in Simplified Chinese and Traditional Chinese, providing full project documentation in both languages
  • Improve code block formatting in the main README by specifying language for code snippets
  • Correct and clarify the formatting of JSON response examples in the main README
  • Update the environment variables table in the main README for better clarity and consistency

Support Traditional and Simplified Chinese documentation.

Thank you for the pull request! Unfortunately, we currently do not have the resources to maintain translations like this. However, we are open to suggestions about how to better meet this need. In the mean time, this repo is licensed under the MIT license, so feel free to share your translation with others. Also, if there are parts of the README that could be more friendly to non-native English speakers, please do open an issue or a PR!
