use case that is annoying atm:

• user have two monitors or 3 audio device on and recorded by screenpipe
• user unplug a monitor, thread will crash likely but not affecting rest of the code
• user replug the monitor and might want it to reconnect automatically

same for audio device

definition of done:

• when user select multiple devices eg screenpipe -monitor-id foo --monitor-id bar --audio-device boo --audio-device baz and unplug baz and foo and then replug them it will reconnect without any action from them

additional context:

• you can look at #670 which i very quickly started to impl this but not sure it works actually
• i suggest some loop somewhere or something that watch poll if the device(s) are back and if yes restart record it
• you can use the code in the #670 ofc, i will not work on it as i will be focused on #686
