Rename lists to models

Context

When looking at singletons, we ran into the problem that the 'thing which list is attached to in the config' was now going to represent a shape/name/thing that was not all lists (they would be lists OR singletons)

Sparring was done, and the word models was settled on, with the intent to name the superset thing of list | singleton a model.

Reviewing this change in addition to singleton work became very onerous so this change has been split out for separate review, however the intent is that this then singletons will be merged close together.
