Not sure if there could be compatibility issues that makes arbitrary versions unsuitable, it is a regular sbt/ivy/coursier dependency/plugin of the Akka gRPC plugin so should be possible to override...

For the next release we are bumping to Scala 2.13.17 so I'll see if we can move on with this.
