[Feature Request] Add ubuntu server image instead of ubuntu desktop

Hi there,

First of all, thanks for all the great works you've put here.

Just a small suggestion, I would love to see ubuntu server/minimal image instead of ubuntu desktop.

1. Snapdragon Dev Kit is actually a Mini PC, probably many will use it as a server.
2. Many people, including me, don't really like all the bloatware ubuntu-desktop comes with. We have our own preferred environment (For me, it's Wayland + Sway)

Although it's not too hard to apt remove all of them, it would be nice if there is a clean image with only minimal stuff, so all the unused files will not be polluting the rootfs at first boot.

Or alternatively, if there are some basic steps on how to create the image. To my understanding, there might be a few things to be modified on top of the rpi image.
