Last time we upgraded the vscode-languageclient, we were hit by issues our test suite didn't discover: https://github.com/haskell/vscode-haskell/issues/852
Thus, upgrading is a risk we need to consider.
Also, the official documentation still seems to use 7.0.0: https://code.visualstudio.com/api/language-extensions/language-server-extension-guide#lsp-sample-a-simple-language-server-for-plain-text-files. I wanted to wait until they updated their documentation, as the package itself feels not well documented (or I am unable to find the relevant documentation).
However, @bzm3r, if you think this is fine to merge, I would appreciate a manual test proving this is fine.
