[Feature] Substreams Data Source should have eth hosts functions

In the light of https://github.com/graphprotocol/graph-node/pull/5704, apply the same thing for Substreams Data Source.

Are you aware of any blockers that must be resolved before implementing this feature? If so, which? Link to any relevant GitHub issues.
