I'm also happy to kickstart this; I'll just need guidance on the breakdown of tasks, so that the PR is not a massive 5000-line diff

The first thing to do would be to check our other PRs that added new connectors, for example here the MangoPay connector : https://github.com/formancehq/stack/pull/397 That will give you a large idea of what you need to do in term of files to edit etc.
