reference to the notebook interface in the doc is for nbclassic

Describe the bug

I just came across this page in the doc https://jupyterbook.org/en/stable/content/metadata.html#adding-tags-using-notebook-interfaces

which imho could use a small update since it is about the classic notebook, which fewer and fewer people are likely to be using so at the very least it could make sense to

• switch the 2 sections and have jlab show up 1st
• 2nd: notebook7: it looks like the new notebook does not have a tool for dealing with cell metadata, maybe that can be mentioned as well
• 3rd: notebook classic: make it clear that the section on notebook is for classic which is a deprecated version of notebook
