EIP-6916 - Add support for `ephemery` testnet

We should add support for the ephemery testnet as a way to provide more general community support.

This could be a great proving ground to see if the client can track a chain and keep up over time.

A bonus goal would be to work with devops to get a VPS running with our client + lodestar (or another CL that supports it) and keep it running.

Great initiative, just learning about this. I think with our current focus/limited resources we can close this though
