Add ERC-8040: ESG Tokenization Protocol
This proposal introduces ERC-8040, a new Ethereum standard defining a framework for institutional-grade tokenization of ESG and agricultural assets. It establishes a verifiable and AI-governed model — the AgroCrypto Trust Framework (ATF-AI) — for on-chain validation of carbon credits, environmental assets, and cross-chain interoperability.

I've just updated this PR with the requested fix - the Attestation struct is now properly defined before Metadata for better code readability (addressing the Copilot review comment).
ERC-8040 introduces an AI-native protocol for ESG-compliant asset tokenization with:
- ✅ Quantum-resistant cryptography (SHA3-512 full digest storage)
- ✅ AI-governed audit and compliance layer (ATF-AI)
- ✅ Post-quantum readiness with 512-bit security
- ✅ Clean diff: 1 file, 2 commits, 168 lines added
