[Data Grid] Columns list needs to be virtualized / allow for categorization

The columns list needs to be virtualized and allow for a top level category. Right now the Security product has 100s of fields, and relizes on a weird passdown solution where you select the fields in a model first, then pass them down to the data grid separate in the columns list.

Likely adding categorization and virtualization to the columns list natively in EUI would negate the need for their extra (confusing) interface
