docs: cloud docs contain outdated apm-server defaults
Cloud docs https://www.elastic.co/guide/en/cloud/current/ec-manage-apm-settings.html may be outdated. Fix the docs and find a long term docs maintenance strategy for docs that are outside observability.

The attached documentation now redirects to observability, which is way better for maintenance. In docs v3, we should hide all the 7.x vs 8.x complexity, and make it 9.0+ configs vs 9.1+ configs. All the configs will need to be revisited as there may be deprecated / removed configs in 9.0.
Alternatively, I wonder if there's any actual difference between cloud legacy apm server vs standalone apm server, and whether we could just redirect users to the apm server config docs. This will be easiest to maintain and will save us most time.
