Convert website from Gatsby to Eleventy

Decided in today's DTCG monthly meeting was that the website would be moved from Gatsby to Eleventy for a few reasons

  • Easier to set up and get involvement
  • Adding Images and other content will be easier to manage

The website is in a good state at the moment to convert to another platform, so we should do that as we continue defining our content strategy.

I'll be trying out Eleventy in the next few days. If it's easy enough as it seems, I'll give the conversion a shot
