Run tests on current Ruby versions

The CLI is currently tested on Ruby versions: 2.4, 2.5, and 2.6. 2.4 is now end of life, and the latest version is now 2.7.

Our pipeline should be updated to remove 2.4 and add 2.7 as tested versions.
