How to adjust all services?

Hi, i'm running all services that c't provide. It's awesome. But how could i adjust some settings. like maybe jitsi performance, or jitsi welcome messages, images eg.

And for nextcloud i often use for updates "occ" so i have to go however with a shell access to the nextcloud. But HOW??
