Allow for single value passed in to `xvals`, similar to `yoffsets`

No ticket for this one, just figured it was a useful shorthand!

Regenerated the readme example plot to show the behavior, I think it looks a little cleaner now. Subplots 3 and 4 were not matching between the script and the results in the main branch, so this also brings those up to date.
