add interceptors grpc

closes # I think it might be necessary to use grpc interceptors for the channel and I have created a method to be able to add interceptors. It could be used for example to create an interceptor to send traces with Opentelemetry.

This PR is outdated and the CLA hasn't been signed since the beginning, so closing this.

Additionally I don't want to have external dependency as part of the API. Especially as we likely have to move away from grpc.
