Well, there's this: https://github.com/bitbeans/SimpleDnsCrypt/issues/417#issuecomment-514135323, and the issue was also discussed at length (#514, #510, #432, #393, #18), but I've created a version over at https://github.com/instantsc/SimpleDnsCrypt which should help a little bit with custom resolver creation, you'll still have to generate the stamp yourself using https://dnscrypt.info/stamps/ or something like that, but GUI support is coming soon-ish!
