PID is wonky

In reviewing the latest reflow state machine and PID code, it is clear the intern took the "hardcode the profile" shortcut.

While changing the profile is possible, the state machine has several shortcuts that should have been figured out with proper tuning.

Will schedule a sit-down with the intern.
