[Swift / Android] Logging: Add example with injecting CredentialsProvider for use w/o Auth

Describe the content issue: The Android and Swift Logging sections don't contain an example of constructing the AWSCloudWatchLoggingPlugin with a custom credentials provider for advanced use cases.
