What This PR Changes

• I was remembering how the BLE stuff is structured. So i considered that the ble-device-to-device.md doc was the most convenient one
• The nano 33 BLE generic documentation (IMHO) mixes wrongly the central and peripheral roles when the BLE services/profile concepts are introduced
