Recent items and Quick Menu items
The script worked perfectly, but found that Recent items and Quick Access link (pinned folders) didn't come across.
As to my understanding, Quick Access links are stored in
%APPDATA%\Microsoft\Windows\Recent\AutomaticDestinations and %APPDATA%\Microsoft\Windows\Recent\CustomDestinations in various files with an extenstion named .automaticDestinations-ms and .customDestinations-ms.
Please be aware that those directories are hidden, which means you cannot browse to the location. You need to enter the path in Windows Explorer address bar directly.
Can you confirm that those files exists in the old VHD and are missing when the VHD is converted?

I can confirm they are in the upd vhd. But in the fslogix vhd they are there with the files when I look via cmd, but trying to go via windows explorer the folders etc are there but no files
