Add or update HTTP/WebSocket examples for API v2

It's probably for the best to have all the examples use API v2, which is more internally consistent and generally easier to use. This also includes the examples in the WebSocket API Tool.

I would hold off on having it the default until xrpl.js, xrpl-py, and xrpl4j have confirmed support for it. Until then it might not be a good idea to push hard.
