Outline needed API test cases to increase dependabot confidence

Problem

We need to determine which test cases we need to increase our confidence of merging Dependabot PRs. Is our current coverage sufficient? What are we missing?

@dhruvkb this was previously something you volunteered to do; do you think it's still necessary, or have we had enough success with dependabot that we can merge this? The recent addition of the smoke test in #723 seems like a step in the right direction 😄

There is still significant scope for us to improve our tests. I'd recommend keeping the issue open and in the Backlog.
