Updated Java to 21 and Minecraft to 1.20.6.

Fixes the issue that I reported - see #31

Tested locally running on a M1 MacBook with docker

@TheRemote is this a flaky test or a real problem? I can't observe the logs from the runs.

@jayonthenet No updates from the author, huh? I'm having issues too. Ended up building the image myself with your fixes, would rather go back to pulling master/getting from DockerHub.
