docs(progress): remove reverted IterationSpeedColumn
Remove IterationSpeedColumn from the progress documentation, as this addition was reverted not long after being merged
(see https://github.com/Textualize/rich/pull/3332#issuecomment-2383977334).
Closes #3739.
