Theme selection

Allow user to select light mode or dark mode. Improves accessibility.

Needs UI input to see how a user will change theme.

Could be nice to support multiple different themes, including for accessibility. e.g. high contrast. Question: what themes do we want to support.

We currently have a mix of light and dark mode.

While that has some advantages (less screen glare because of the dark settings, but the chatbox with the most text content is light mode, which is easier for a lot of people to read. While this feels like a compromise to have the best of dark and light mode, it comes with the big disadvantage that it makes it nearly impossible to customize the theme with browser plugins, you can't turn it to purely light mode or purely dark mode.
