Include Mac Catalyst in Platform Options (Mac)

[Enter feedback here] Could this page be updated to reflect that we now have mac catalyst support: https://github.com/xamarin/xamarin-macios/issues/6210#issuecomment-933222588 and https://github.com/xamarin/xamarin-macios/wiki/Mac-Catalyst-(Early-Preview)

It seems to be the most straightforward way to add mac support to an existing Xamarin.Forms or Xamarin.iOS so I think it's very important to include that information.
