rename package to DimensionalEngine.jl

Since the master version its already using DiskArrayEngine.jl as the backend and several features are (will be) on the roadmap, maybe it makes sense to start the conversation about renaming the package to

DimensionalEngine.jl or some better suggestions, open to discussion.

I do like DimensionalEngine.jl! Better than YAXArrays.jl, where I always speak the workds in my head to be sure I type the right letters! 😁
