Add documentation for interface to CoolProp

There will need to be some documentation on the new coolprop interface

• concepts of what coolprop is and why we have wrapped it
• how to do specific things in coolprop, including installation steps
• tutorials on coolprop integrated into a larger workflow and/or customizing it
• reference for the coolprop functions
