[Upgradability] - Run example upgrade past updating the internal state

What is this task and why do we need to work on it?

While #2792 closes #2811, we do not run the upgrade example beyond updating our internal state. It would be nice to run these to the point that messages are being sent (and received) with the new version in the example.
